Night out: the city after the kitchens close

Amsterdam is a city with two shifts. The first one ends around eleven, when the canal ring quietens and the restaurants start stacking chairs. The second one begins about then, in rooms you would walk past in daylight, and it runs until the trams start again.

Where the late city actually is

Not in the places the guidebooks send you. De Pijp keeps its kitchens open longest and its bars busy after them, which makes it the reliable starting point for anyone who landed too late for a proper dinner.

Amsterdam Noord is where the long nights are, in converted industrial halls on the wharf with the ferry running back across the water all night. The old centre has the piano bars and the jazz basements, and the nightlife squares have everything else, loudly.

Letting somebody else choose the door

The value of local company on a night out is not the conversation, pleasant as that is. It is not queueing at the wrong place, not paying a cover charge to stand in a room you will leave in ten minutes, and knowing which venue is genuinely good on a Tuesday.

How the night is timed

Late starts are normal. A booking beginning at eleven is unremarkable here and one beginning at one in the morning happens most weekends. Notice is the same hour as any other city booking, though availability narrows as the night goes on.

Think about the end before you think about the start. A night that runs to four is a different length of booking from one that finishes when the first bar does, and deciding that early is far easier than negotiating it at three. An extension is settled at the same rate and typed out before it starts.

What to wear, and what she will

Amsterdam is not a formal city after midnight. Most of the good rooms are indifferent to what you are wearing, and the ones that are not tend to care about attitude rather than tailoring.

She dresses for the night you describe, which is why the description is worth two extra lines. A jazz basement, a club on the wharf and a hotel bar with a doorman are three different evenings, and she will arrive prepared for the right one.

Q01Does she choose where we go?

She will if you want her to, and that is usually the better plan in an unfamiliar city. Tell her roughly what kind of night you are after and she will build a route out of places she actually goes to. If you have a list of your own, she is very happy to follow it instead.

Q02Are drinks and entry included in the fare?

No. The fare covers her time and her travel to you. Drinks, cover charges and taxis are ordinary costs of a night out and are settled as they would be on any other evening. Mention it when you book if the night involves anything with an entry fee so the expectations match on both sides.

Q03Can the night start after midnight?

Yes. The desk answers messages at every hour and bookings that begin at one in the morning are ordinary for us. The one thing that changes is choice: the later you write, the fewer names are free, so a decision made at ten gives you a much better selection than one made at two.

Q04What if the evening ends earlier than planned?

Then it ends earlier, and nothing about that is awkward. The booked hours are the booked hours, and if the city disappoints or the flight catches up with you, going back to the hotel is a perfectly good way to spend the rest of them.
