The most common reason is a table. A dinner with a colleague or a friend works far better when neither of you is the only one making conversation, and a table of four has a rhythm that a table of three never quite finds.
The second reason is energy. A night that runs from a restaurant to a bar to whatever is still open at two has more momentum with four people in it, and nobody ends up standing in a doorway wondering whether the evening is over.

Matching two free evenings takes considerably longer than matching one. A same night duo occasionally works in Amsterdam Centrum, where the choice is widest and the distances are shortest, but it is not the way to plan one.
A day of notice is comfortable, two is better, and for a specific pair in a busy week it is worth writing well ahead. In De Pijp and the other districts the arithmetic is the same, simply with fewer names to draw on at short notice.

Each companion is quoted separately and each accepts or declines her own booking, so there is no package and no discount for asking two. Each of them opens from €180 per hour, and anything longer arrives as two clear figures in the same conversation.
Both are written down before a word of the evening is agreed, and the fare card explains why so little of this is printed in advance. No figure surfaces later that was not already in your thread.
One practical note. Because these are two bookings rather than one, a change to the evening affects two calendars. If the hour moves or the plan shrinks, tell us early enough that both of them can hear about it at the same time.
